Smoked Bacon Wrapped Meatloaf with Jack Daniels Glaze

Ingredients

  • Meatloaf: 1 pound ground sirloin 80/20
  • 1 package Carlton Farms Thick-cut Regular Bacon
  • 1/2 cup chopped sweet onion
  • 1 egg slightly beaten
  • 1/2 cup panko bread crumbs
  • 1 teaspoon black pepperC
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • Glaze: Mix ingredients in a small sauce pan and heat to a simmer. Let rest.
  • 1/2 cup Jack Daniels
  • 1/2 cup honey
  • 1/2 cup ketchup
  • 1 cup ketchup
  • 3/4 cup brown sugar
  • 1 tablespoon of soy sauce
  • 1 tablespoon of molasses
  • 1 teaspoon of black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Directions

  1. Gently mix by hand all ingredients but the bacon in mixing bowl. Make nice oval shaped meatloaf.

  2. Create bacon weave on parchment paper or clear film by weaving bacon strips like lattice. Place meatloaf in the center of bacon weave and use parchment to wrap meatloaf tightly and shape.

  3. Place in smoker on a foil roasting pan using some Jack Daniels barrel chunks or your favorite cooking wood. Smoke about 2-1/2 hours at 275ºF degrees.

  4. When it hits 140ºF internal temp give it a good glaze all around to caramelize.
    It’s done when it hits an internal temp of 160ºF. Let rest 20 minutes.
